Zucchini is one of the most suitable vegetables to consume during Summer. It is considered sweet and astringent in taste, has a cooling effect on the body, and is very hydrating. This side dish pairs it with ghee and cooling spices, all are soothing for the body when the weather is hot, and the mind is agitated.

This recipe can also be made using warmer spices such as cumin, black pepper, ginger, and nutmeg during the cold winter days. The options are limitless! Get creative and dress her up however you like.

Serves 3

Ingredients:
3 big zucchinis, cut into 1cm thick discs
2 tbsp of ghee (or more) / butter or coconut oil can be used instead
1 tbsp coriander seeds
1 tbsp fennel seeds
1 tsp cardamom powder
5 basil leaves (optional)
1 tsp pink Himalayan salt
The juice of half a lemon

 

Preparation Method:
– Steam or boil the zucchini for about 5 minutes (until it becomes softer, but still not too soft)

– In a large pan, melt the ghee. Lower the flame then add the coriander seeds, fennel seeds, and cardamom powder. Toast them until they become fragrant
– Discard the water you’ve boiled the zucchini in, or take it out of the steamer in case you steamed it
– Add the zucchini to the pan with the toasty ghee and spices. Add salt, and give it a good mix until each piece gets coated with the ghee mixture.
– Turn off the heat, squeeze the lemon juice and sprinkle the basil leaves on top.
– Serve warm or at room temperature.
