Zucchini is light on the digestive system, soothing for the body and has a mild and sweet taste to it. It is rich in vitamins and minerals, without being calorically dense which makes it great for weight-loss. It is also very hydrating and is wonderful for those suffering from constant dryness and constipation.

Serves 3

Ingredients:
8 large zucchinis, chopped
2 tbsp ghee
1 tbsp pink Himalayan salt
1 tsp freshly ground black pepper
1 tbsp lemon zest
The juice of half a lemon
A handful of chopped herbs (parsley, dill, cilantro or basil)
2 tbsp toasted almonds, chopped

 

Preparation Method:
– In a large pot, heat-up two liters of water, add the chopped zucchini, and boil it for 10 minutes until it softens
– Use a hand-blender to blend the zucchini into a smooth consistency
– Add the ghee, salt, black pepper, lemon zest and juice. Stir well
– Serve the soup warm, with a handful of herbs and toasted almonds on top

Notes:
– Vata and Pitta individuals can add extra ghee if they wish
– Pitta should leave the black pepper out on a hot summer day
