Blackstrap molasses is the dark-brown and viscous substance that remains after the maximum extraction of sugar from raw sugarcane. It is thick, syrupy, sweet, bitter, and slightly warming. It balances Vata but can aggravate Pitta and Kapha in large doses. Molasses is rich in iron, an excellent blood builder, and strengthens the heart muscles. It is very nutritious and helpful for women during pregnancy or postpartum and for treating anemia.
Makes 40 cookies
Ingredients:
1 cup almond flour
1 cup rice flour
2 tbsp granulated sweetener
1/2 cup REA Ghee, butter, or coconut oil
1/4 cup blackstrap molasses
1/2 tsp baking powder
2 tsp cinnamon powder
2 tsp ginger powder
1 tsp cardamom powder
1 tsp nutmeg powder
1/4 tsp cloves powder
A small pinch of salt
Preparation Method:
– Preheat the oven to 180C
– In a mixing bowl, combine the almond flour, rice flour, spices, salt, and baking powder.
– In a separate bowl, whisk together the ghee (or butter, or coconut oil), molasses, and sweetener until well combined. Add the dry ingredients to the wet ingredients and stir until a dough is formed.
– Shape the dough into balls and place them on a baking sheet lined with parchment paper. Use the bottom of a glass to press each ball down to form a 0.5 cm thick cookie.
– Bake the cookies for 10-11 minutes until they turn golden brown on the edges.
– Let the cookies cool completely.
Notes:
– Pitta and Kapha individuals should eat them in moderation
