Roses are considered Hrdaya in Ayurveda, which means they are calming for the physical and emotional heart. Pairing rose with the fragrant, soothing, and alleviating green cardamom helps heal the heart and elevates the soul. The use of almond and coconut flour adds a cooling component, making these cookies the perfect treat on a hot summer day.

Makes 30 small cookies
Ingredients:
1 1/4 cups almond flour
1/4 cup coconut flour
1/4 cup sweetener of choice (Jaggery, coconut sugar, cane sugar, or Erythritol)
2 tsp cardamom powder
2 tbsp rosewater
6 tbsp salted butter at room temperature
1 tsp baking powder
Dried rose petals for garnishing

 

Preparation Method:
– Preheat the oven to 175°C and line a baking sheet with parchment paper
– In a mixing bowl, combine almond flour, coconut flour, sweetener of choice, cardamom powder, and baking powder. Mix well using a spoon
– Now add the soft butter and rosewater to the flour mixture, and work it with your fingers until a dough is formed
– Use your hands to roll 30 balls, place them on the baking sheet with about 3cm gap between each one. Now flatten them lightly to form desc-shaped cookies, then use your fingers to gently press the rose petals on top
– Bake for 12-17 minutes, or until browned around the edges
– Let the cookies cool completely before you eat them, or transfer them into an airtight container
