Cauliflower has an astringent taste and a cooling effect on the body. It is light and dry, making it a wonderful vegetable for Kapha and Pitta, but not for Vata. It has high levels of anti-inflammatory compounds, which help support the health of the brain and the heart. It is considered an anti-cancer food, like all other cruciferous vegetables (broccoli, cabbage, kale, Bok Choy…etc.). Cauliflower is rich in nutrients and low in calories, making it perfect for weight loss if that is your goal. The addition of turmeric in this recipe amplifies the anti-inflammatory properties and makes it easier to digest.
Serves 3-4
Ingredients:
1 large head of cauliflower
2 tbsp ghee
1 tsp turmeric powder
1 tsp pink Himalayan salt
1/2 tsp of freshly ground black pepper
1 tsp coriander seed powder
A handful of chopped parsley
Lemon juice
Preparation Method:
– Preheat the oven to 200 degrees Celsius
– In a large pot, boil some water and add the cauliflower head after washing it. Boil it for 10 minutes
– Meanwhile, in a small mixing bowl, melt the ghee and add the spices and salt. Mix it all together until you get a homogenous paste
– Discard the water, pat the cauliflower dry and place it on a baking sheet
– Rub the ghee mixture all over the cauliflower
– Roast the cauliflower in the oven for 25-30 minutes until it becomes golden brown
– Serve it with a sprinkle of fresh parsley and a squeeze of lemon on top
Notes:
– Vata individuals can eat cauliflower in small quantities and see how it affects them
– Cruciferous vegetables should never be eaten raw. Always cook them before consuming
