These Golden Crackers are simple, gluten-free, and grain-free snacks that can go really well with any dip. Turmeric and nutritional yeast add a mild, yet really nice cheesy flavor to these, but feel free to substitute them for any other spice or herb. Try using Zaatar, Ajwain (carom seeds), nigella seeds, cumin, fennel seeds, rosemary, paprika, sumac, or any other flavor combination you like. A simple sprinkle of salt is also great, but why not using the opportunity to add spices to your life where you can?
Makes 20-30 crackers
Ingredients:
1 cup almond flour
1 egg white
1 tsp turmeric powder (optional)
2 tbsp nutritional yeast (optional)
0.5 tsp ground black pepper
0.5 tsp salt
Add-On’s (optional)
1 tbsp sesame seeds
A sprinkle of coarse salt
Preparation Method:
– Preheat the oven to 160C
– In a small bowl combine all the ingredients except for the sesame and coarse salt (if using), and mix well until a firm dough is formed
– Roll the dough out between two sheets of parchment paper. You want it to be very thin and spread in a rectangle or oval shape
– Sprinkle the sesame seeds and coarse salt in using, recover with the parchment on top and give it a final roll to make sure they stick to the dough
– Remove the top sheet of parchment paper and use a knife to score the dough into the shape of your crackers, rectangles, or squares. Press the knife down then lift and press down again rather than dragging through the dough
– Place the sheet with the crackers in the oven for 10-12 minutes or until they are golden brown
– Allow the crackers to cool before snapping them apart where you have scored them
– Once completely cooled, store in an airtight container to keep them fresh
