Most energy bars or balls in the market are deceivingly healthy and take away more energy than they provide. However, these balls are simple to prepare and contain natural, hypo-allergenic, and wholesome ingredients. These are gluten-free, Paleo, Vegan, and AIP compliant, cooling, and suitable for those dealing with an autoimmune issue, are over-heated, or want a treat suitable for summer. Keep a batch in your fridge for when you need a booster.

Makes 12-15 balls

Ingredients:
1 cup desiccated coconut
0.5 cup pure maple syrup
1 tbsp lemon zest
1 tsp dry ginger powder
0.5 tsp pink Himalayan salt

 

Preparation Method:
– Start by dry toasting the coconut in a pan over medium-low heat. Keep stirring to prevent the coconut from burning. Once golden and fragrant, transfer the toasted coconut into a bowl.
– Pour the maple syrup into the same pan and heat over medium-low heat until it starts to bubble. It’ll take about 2-3 minutes.
– Remove it from the stove, add in the toasted coconut, salt, lemon zest, and ginger powder. Mix everything very well until it becomes homogenous.
– Start rolling the coconut maple dough into bite-size balls. Work fast, or else it’ll start to harden.

Notes:
– Kapha people shouldn’t indulge. Eat it in moderation to avoid excess mucus and weight gain.
