Cauliflower has an astringent taste and a cooling effect on the body. It is light and dry, making it a wonderful vegetable for Kapha and Pitta, but not for Vata. It has high levels of anti-inflammatory compounds, which help support the health of the brain and the heart. It is considered an anti-cancer food, like all other cruciferous vegetables (broccoli, cabbage, kale, Bok Choy…etc.). Cauliflower is rich in nutrients and low in calories, making it perfect for weight loss if that is your goal. The addition of turmeric in this recipe amplifies the anti-inflammatory properties and makes it easier to digest.

Serves 4-5

Ingredients:
2 tbsp chickpea flour
2 tbsp tahini
1 small head of cauliflower, cut into florets
1 tsp black pepper
3 tbsp water
2 tbsp olive oil
1 tsp mustard
1/2 tsp salt
3/4 cup white sesame seeds
1/4 cup black sesame seeds (or more white sesame)
1 tsp oregano
1/2 tsp salt flakes
1/2 tsp chili flakes

For the yogurt dip
1 cup Greek yogurt
1/4 cup chopped fresh herbs (dill, parsley, chives, or green onion)
The zest of 1 lemon
1/2 tsp salt
1/2 tsp black pepper

 

Preparation Method:
– Preheat the oven to 200C.
– Into a big Tupperware container, add the chickpea flour, tahini, olive oil, water, black pepper, mustard, and salt. Mix well, and add the cauliflower florets. Close the lid and shake the cauliflower until all the florets are well coated with the chickpea mixture.
– In a separate bowl, the sesame seeds, oregano, and chili flakes. Mix well.
– Prepare an oven tray with parchment paper.
– Dip each wet cauliflower floret in the sesame seeds to form a thick coating. Place the sesame-covered florets on the tray, and bake them for 30 minutes.
– Serve the sesame-crusted cauliflower hot with the yogurt sauce, or any other sauce you like.

Yogurt Dip
– Add the yogurt, salt, chopped herbs, lemon zest, and black pepper. Mix well.
